Meatballs are kind of like, something you need in your back pocket in the fall and winter. Not the actual meatballs, because that would be a little weird, but the recipe. My basic low carb meatballs are good for so many things. Swedish meatballs, spaghetti and meatballs, meatball sub, meatball stuffed pasta brain...Lorrrrdddt, not that. I saw that idea on Food Network.
These really take a few minutes to make. I repeat, do not buy store bought frozen meatballs anymore. They have a couple of carbs each and you need to save up your carbs for a cheat day. If you have an extra hour, you can really bang out a freezer full of these meatballs and then use them when you are desperate for an easy weeknight dinner.
Also, can we talk for a second about why children's sports practice is so late in the evening. Is it just me? My 7 year old is at cheer practice until 8:30pm two nights a week. They clearly care nothing for my intermittent fasting goals. I have to roll all.the.meatballs I can, so that I can eat dinner before 9:00 during the week.
How To Make Basic Low Carb Meatballs
It's really easy. Just put all of the ingredients in a bowl, and stir them up. You can use your hands or you can use a spoon, just be careful not to overwork the mixture or it could become tough.
You can bake them on a sheet, or saute them in a pan, cook them in a box...with a fox. Just joking, NO ONE puts meatballs in a box. Once they are done, you can use them right away or freeze them.Print
These basic low carb meatballs are versatile enough to use in all of your meatball required recipes.
1 lb ground beef
2 Tbsp olive oil
½ tsp onion powder
1 tsp garlic powder
½ tsp salt
½ tsp pepper
¾ cup fresh parmesan cheese, grated
½ cup frensh parsley
Preheat oven to 375° (or not if sauteeing)
Combine all ingredients in a bowl, being careful not to over mix.
Form into 1 ½ inch balls
Bake for 15-20 minutes
Saute in a cast iron skillet for 10-15 minutes with 1 Tbsp olive oil (make sure to brown on all sides)
