Lemon Orzo With Asparagus and Chicken

Description

Orzo pasta is tossed with the creamiest lemon sauce and packed with healthy Spring asparagus. The perfect lunch or side dish at dinner time, this orzo with asparagus dish will be at the top of your list this Spring and Summer. Elegant but simple, kids and guests will make it disappear quickly.

Ingredients

1 1/2 cups whole wheat orzo pasta

1 tsp salt

3 cups water

2 cups fresh asparagus, chopped

FOR THE SAUCE:

1 Lemon, zested; half juice

1/2 cup non-fat Greek yogurt

Light Mayonnaise 

1/4 tsp salt

1/8 tsp pepper


Instructions

In a bowl, combine:  mayo, yogurt, salt, pepper, lemon zest.  Stir to combine

Add lemon juice, stirring quickly

In a large skillet, bring water to a boil and add salt, reduce to medium heat

Add orzo, stirring frequently

Cook for 5 minutes and add asparagus

Cook for 5 more minutes and begin stirring frequently to release gluten into the remaining water, pasta will start to become creamy.

Remove from heat and stir in sauce
