Apple cinnamon oatmeal muffins are full of tart sweet apples, warm cinnamon, whole wheat flour, oats, and l-o-v-e. It’s like a big hug in the morning when we’re all sitting around wondering what’s next. Everyone loves a muffin in the morning and since these are full of oats, they kept us full until lunch.

I’m pretty sure that’s a bonus because when your “staying in” quarantined, second breakfast isn’t far off. Is second breakfast chips? Maybe.
Are Sugar Free Muffins Good?
Yes. So good. All the yum. I promise you won’t be able to tell the difference between these super healthy, full of fiber muffins and less healthy muffins. Swerve brown sugar is my go-to ingredient to cut the sugar in many of my recipes which lowers the calories and potential blood sugar spike. The oats add a lot of fiber and the the whole wheat flour also lessens the blood sugar spike.
How To Make Apple Cinnamon Oatmeal Muffins
It starts with the dry ingredients. A little whole wheat flour, Swerve brown sugar (sugar substitute), cinnamon, oats, and baking powder. Easy.

Next, you will make a little apple sauce. I used the Magic Bullet to whip up half an apple with a little water. Did I tell you the Magic Bullet is my favorite kitchen tool? It is.

Combine the apple sauce with the wet ingredients: egg, vanilla, diced apple.

The two get gently stirred together and the muffin batter appears. Try not to eat it by the spoonful…or don’t try. I lost the battle. It’s okay, I’m okay.

They bake up quickly, eat them while they’re warm. With butter? Without butter? It’s the only decision this morning that has to be made. Are you wondering why I only made 7 muffins? We only needed to eat 7 muffins, and actually…we only ate 5.
I didn’t want to use up my pantry goods, and have leftovers. If you need more than 7, double the recipe. If you have extra, freeze them. Actually, I think freezer meals are a good idea right now. We’ve been eating dinner at 8:00pm these days.
That’s because I’ve been sitting on the back porch staring off into the distance all evening. I’m so okay with that right now.

Apple Cinnamon Oatmeal Muffins

Description
These muffins are easy to make, full of fiber, sugar free, and family friendly.
Ingredients
1/2 cup oats
1/2 cup whole wheat flour
3 Tbsp Swerve brown sugar (or regular brown sugar)
2 tsp baking powder
1/8 tsp salt
1 tsp cinnamon
2 eggs
2 tsp vanilla
1 apple, halved; 1 half diced
2 Tbsp water
Instructions
Preheat oven to 350°
Whisk dry ingredients in bowl: oats, flour, Swerve brown sugar, baking powder, cinnamon
In a Magic Bullet, or food processor: process half apple with water to make applesauce
In a separate bowl whisk together wet ingredients: eggs, applesauce, vanilla
Combine wet and dry ingredients, stirring until combined
Portion into muffins wells
