Easy Homemade Chicken Pot Pie

This easy homemade chicken pot pie is perfect for busy weeknights.  This recipe is makes two chicken pot pies.  You will cook the filling for both and save half in the freezer for another night.  You will also save one ready made pie crust in the freezer.  Yay for two nights tackled!



2 Tbsp Grapeseed oil

2 onions, diced

4 carrots, diced

5 celery stalks, diced

4 cloves of garlic, minced

1.5 lb cooked chicken, diced

4 Tbsp butter

1/2 cup flour

1/4 cup white wine

3 cups fat free, lower sugar milk like Fairlife

2 ready made pie crusts


In a heavy bottom skillet, heat Grapeseed oil on medium heat

Add onions and saute until translucent

Add garlic and saute until fragrant

Add celery and carrots

Continue cooking until they become slightly softened, 5-10 minutes

Move vegetable mixture to one side of the pan and melt butter in the other

Whisk in flour and then stir into the vegetables

Continue cooking, constantly moving the vegetables around the pan

Pour in white wine, scraping all the bits off the bottom of the pan

Add milk and stir the vegetables until everything is incorporated

Allow the mixture to come to a low simmer and stirring continually until thickened

Remove half the mixture to your desired dish and the other half to a freezer safe container
