How To Make This Easy Low Carb Meatloaf Dinner
This is going to come together fast, and then be hands-off while it’s in the oven. That’s what I love about this; our life is a hot mess in the evening. Homework, baby, cooking, it’s all so much. I don’t have time to babysit meatloaf. You don’t either.
It starts, as all good things do, with the food processor. The onion and garlic go in with the salt. They get pulsed until they form a creamy paste. In go the eggs until they are combined with onions and garlic. Then the shredded cheddar for just a second. You will stir it into the ground beef. Did you notice that this little slurry will be perfectly distributed in the ground beef? That’s the best. It’s easier to stir in too. No mashing the meat, it goes in smooth and easy, which will give you a softer meatloaf. Stirring and mashing too much will always result in a tough meatloaf.
Form it into a loaf shape, and throw it in the oven. Did I say prep time is under 5 minutes? Yes, that!

This meatloaf is so easy to make with less than 5 minutes of prep time. It’s low on effort, high on flavor.
1 pound ground beef
1 red onion
4 cloves garlic
1/2 cup shredded cheddar cheese
1/2 tsp salt
1/2 cup Low Carb Keto Sugar Free Ketchup
Preheat oven to 375°
In a food processor, blend onion, garlic, and salt until creamy but not pureed.
Add eggs and shredded cheddar, pulse until combined
Combine mixture with 1 lb. ground beef
Bake in 375° oven for 40 minutes
Turn the oven up to 425°
Remove from the oven and cover with Low Carb Keto Sugar Free Ketchup
Bake for another 10 minutes
