Everyone is home right now, and everyone wants to eat so many things. I basically am taking short breaks between making meals for my family. I have to choose some quick options at this point to preserve my sanity and keep the children happy at the same time. One thing is for sure, breakfast Sandwiches are my favorite breakfast. And since we're talking about favorites right now...bacon, egg, and cheese breakfast sandwiches are my first favorite and sausage, egg, and cheese are my second favorite.
To make these really quickly, I use the Hamilton Beach Breakfast Sandwich Maker. It takes me about 10 minutes to make 6 sandwiches. I have the dual sandwich maker, but really...the single is fast too and if you just want one...you just want one.
Personally, I have four people here at home eating breakfast sandwiches right now, so making six at a time is practical. I have also made them for the freezer and then reheated them in the microwave or oven. Don't worry, it's easy to make these without a sandwich maker. Not as easy, but I will tell you how to do it both ways in the recipe at the bottom of this page.
How To Make Easy Morning Breakfast Sandwiches
First, let me tell you about English muffins...they are always buy one get one free at my local stores. I buy 4 or more at a time and freeze them. They thaw out easily and are exactly the perfect size for this breakfast sandwich maker!
To make my life, and the clean-up as easy as possible, I cook the bacon in the oven. I planned on a half piece of bacon for each sandwich, but you do you, boo. Two, three, get it friend...this is your breakfast.
First, you will close the inside rings of the sandwich maker, place the bottom of the English muffin down in the bottom ring with bacon on top, cheese on that. And by the way, bacon and cheese, BFF's forever.
Pull down the next ring and make sure that the slider piece is closed. Spray with cooking spray and then crack one or two eggs on top. Slightly scramble the eggs with a fork. Add salt and pepper, put cheese on top. Put the top of the english muffin on and close the whole thing. Set it for 3-5 minutes depending on how cooked you want things. 3 minutes and the English muffins are still soft; 5 minutes and they are more toasty.
I would have loved to load these up with bacon and cheese, but we are staying in like everyone else right now, trying to avoid the Coronavirus. I'm stuck with what I have and I don't plan on leaving for 60 days since I have an autoimmune disease. Also, the kids go where I go, and they literally touch everything. All the things, touchtouchtouch.
How Much Does It Cost To Make Homemade Breakfast Sandwiches?
Since many people in the country are finding themselves at home, without work, let's look at how cost effective it is to make our own breakfast sandwiches. I always find English muffins buy one get one free at my local grocery stores, and I raise backyard chickens for eggs (making my costs a little less)
English Muffins: $.25 each (assuming buy one get one free)
Bacon: $.28/ slice (Great Value Hickory Smoked Bacon)
Cheese: $.08/ slice (Great Value American Cheese)
Eggs: $.13/ each (Great Value Lg. White 18ct)
Total: $.74/ each or $2.96 for a family of four

Breakfast sandwiches are SO EASY and cost effective to make at home. Most people can make them for less than $.75 each. You can make them with a breakfast sandwich maker or by using the tools you have.
6 pieces of bacon
6 slices of cheese
6 English muffins
COOK THE BACON:
Preheat the oven to 350°
Lay bacon flat on a baking sheet, I line it with aluminum foil
Bake for 15 minutes (watch it after 10 minutes)
Drain on paper towels
IN THE BREAKFAST SANDWICH MAKER:
Place the bottom of the English Muffin in the bottom ring
Top with bacon and half cheese
Spray top of the next ring with cooking spray, crack in egg and slightly scramble, breaking the yolk
Top with other half of cheese, salt, pepper, and top of English muffin
Set for 3-5 minutes or until desired doneness*.
IN THE OVEN:
Cook bacon in the oven as described above, leave the oven on (350°)
Cook eggs separately, either over hard or scrambled
Assemble the sandwich in the same way as above. Bottom of the muffin, bacon and cheese, egg, cheese, top of the muffin.
Bake on a baking sheet 10 minutes.
3 minutes and the muffin is warm and soft, 5 minutes and the muffin is more toasted.
