This is not just Vegan, this is friendly on so many levels. Kid-friendly. Vegetarian-friendly. People who love yummy food-friendly. The only friendly it is not is Keto-friendly, which is the kind of friendly I need. Since not everyone in our house eats low carb (read: kids), a Vegan Cucumber Sushi Roll is in order.
I mean what are kids but tiny little Vegans? Somewhere along the line of 2 years to 7 years my kids have an aversion to meat. That's okay, I get it. I do too sometimes. I allow that. The can eat all the veg they want.
A Vegan sushi roll makes such an easy weeknight dinner for anyone. If you throw in a bowl of Miso soup it is really satisfying.
How To Make This Easy Vegan Cucumber Sushi Roll Recipe
It starts with our super easy Instant Pot Sushi Rice. It takes about 5 active minutes to get ready and it turns out perfect every time. You will need a sushi rolling mat to get the cucumber roll evenly, and easily, rolled. Don't skip the plastic wrap, it is the key to keeping everything from sticking and from getting your bamboo mat dirty. The mat goes down first, then the plastic wrap, then a sheet of Nori.
Next, you will use that Instant Pot Sushi Rice on top of the nori. Press it down into an even layer, leaving about ¼" at the end for sealing the roll.
Place your cucumber sticks about ¾" away from the edge closest to you. You will need that space to roll around the cucumber sticks. Next you can start rolling.
First roll the edge closest to you around the filling. Continue the circle being careful to pull the plastic wrap as you go. Once you are about 1 ½ times around the roll, give the bamboo mat a gentle, even, squeeze along the length. Continue rolling and gently squeezing each time you make it around.
Remove the mat and plastic wrap. Cut the sushi roll down the middle, then down the middle of each piece again. Keep going until all the pieces are cut to an even size.
That's it! It's really easy to make sushi at home and the sky is the limit for fillings. Cucumber is a favorite and really fresh.
One thing I want to mention, a mistake that I made when rolling. When I got just around the cucumber, I squeezed the mat too hard. It pushed the filling from the base of the cucumber to the sides. Wait until you get around 1 ½ times before you squeeze (gently).Print
This Vegan cucumber sushi roll is easy to make at home. It is kid-friendly, vegan, and vegetarian.
¾ cup Instant Pot Sushi Rice
1 sheet of Nori
Cucumber, sliced into strips
Place plastic wrap and Nori on top of a bamboo sushi mat
Press in rice to evenly cover Nori, leaving ¼" at the end
Place strips of cucumber ¾" away from top of rice
Bring bamboo mat around the filling, being careful to pull the plastic wrap with it
Gently and evenly squeeze the bamboo mat to press the roll together into a circle
Continue rolling and squeezing until you reach the end
Cut the sushi roll down the middle
Continue cutting down the middle of each piece until you reach your desired thickness
