Easy Vegan Cucumber Sushi Roll Recipe

Description

This Vegan cucumber sushi roll is easy to make at home.  It is kid-friendly, vegan, and vegetarian.

Ingredients

3/4 cup Instant Pot Sushi Rice

1 sheet of Nori

Cucumber, sliced into strips


Instructions

Place plastic wrap and Nori on top of a bamboo sushi mat

Press in rice to evenly cover Nori, leaving 1/4″ at the end

Place strips of cucumber 3/4″ away from top of rice

Bring bamboo mat around the filling, being careful to pull the plastic wrap with it

Gently and evenly squeeze the bamboo mat to press the roll together into a circle

Continue rolling and squeezing until you reach the end

Cut the sushi roll down the middle

Continue cutting down the middle of each piece until you reach your desired thickness
