30 Minute Vegetable Soup
Get ready because this is the fastest, healthiest, coziest, soup you have made all year. And yes, crumble up some kettle chips on top...and if anyone asks...tell them I said it's okay. And on a Friday (or is it Monday, then double okay) afternoon, it's SO OKAY, right?!?
THIS IS A CHEAP DINNER OR A HEALTHY CHEAP LUNCH IDEA
This is a pantry/freezer staple wonder soup. Most folks have onions and potatoes hanging around, and a bag of frozen vegetables. I used a blend of frozen vegetables with peas, corn, green beans, and carrots. They are all choppity chopped and ready to go and only cost me $2.22 for a two-pound bag, and I barely used half. Plus one potato, one onion, and half bulb of garlic, and tomato paste....this is a cheap meal! Buying vegetable broth will add to the cost BUT I really need you to follow my free homemade vegetable broth method, okay? I will break down the cost of everything at the bottom of the post because I think it's important to have a couple of cheap meals up our sleeve every week.
INGREDIENTS YOU NEED TO MAKE VEGETABLE SOUP
This is a pantry/freezer staple soup so you don't need anything special to make this easy vegetable soup recipe! Don't forget to scroll to the bottom for the printable recipe.
- Onion: Just one, I used a large sweet onion.
- Garlic: About half of a bulb.
- Frozen Vegetables: I used a mix (from Walmart) of corn, carrots, peas, and green beans, but any other mix will work too. My particular mix does produce a mildly sweet broth, which is super yum.
- Potato: Just one, but if you want to add more that's totally fine.
- Tomato Paste: one 6oz can.
- Broth: Use my free homemade vegetable broth method or free chicken broth method, or any store-bought broth will work too.
- Dried Thyme: Use what you have. Thyme is great but oregano and Italian seasoning are great too.
HOW TO MAKE THIS EASY VEGETABLE SOUP RECIPE
This vegetable soup is so quick and easy that I made a second batch just now while working on this post! Don't forget to scroll to the bottom for a printable recipe!
- Saute: Saute the onions and garlic in olive oil for 3-5 minutes or until the onions are translucent and the garlic is fragrant.
- Stir: Stir in the mixed vegetables, potatoes, tomato paste, broth, herbs, and salt.
- Boil: Bring to a boil covered and then reduce to a low rolling boil, uncovered (a little more than a simmer) for an additional 25 minutes.
