Amy Cakes Fresh Green Bean Casserole
My version of this yummy family classic is SO YUM. While I follow the classic rules of green bean casserole:
- Canned cream of mushroom soup (I’m not trying to be fancy)
- Fried Onions on top
I also have made it my own recipe over the years:
- Fresh green beans.
- Sour cream in the sauce.
- White wine (yes…so good)
- Onions caramelized in bacon.
- Parmesan cheese in the sauce.
- Crispy, smoky, bacon on top.
- Extra saucy.
First of all, we don’t do dry green bean casserole here. We turn up for Thanksgiving for the sauces. And this green bean casserole is extra saucy; lots of sauce. Enough sauce to sneak into the other food on your plate. Also, this isn’t a fancy recipe with “no cream of anything soup”. I’m not trying to make a fancy, organic, healthier, no cream, green bean casserole. Sometimes the classics are “classics” for a reason, I respect that.

INGREDIENTS YOU NEED FOR GREEN BEAN CASSEROLE
- Fresh green beans: Fresh green beans, cut into bite-sized pieces.
- Bacon: Thick-cut smoky bacon.
- Cream of Mushroom Soup: canned classic.
- Sour Cream: adds a little tang.
- White Wine: adds a lot of tang. Don’t worry the alcohol cooks off.
- Parmesan Cheese: Fresh or dry.
- Fresh Onions: Lots of delicious onions to caramelize.
- Canned Fried Onions: Another classic, try not to eat half the can before it goes onto the casserole (I’m talking to me).
- Salt & Pepper: Flavor boosters.

HOW TO MAKE THE BEST GREEN BEAN CASSEROLE
- Render the bacon: Fry the bacon in a heavy bottom pan over medium heat until crispy. About 10 minutes, flipping halfway through. Set bacon aside.
- Cook Onions: Cook the onions in the bacon drippings, adding 1/4 tsp salt and a few cracks (pinch) of black pepper. 5-10 minutes over medium heat.
- Combine: Combine green beans, cream of mushroom soup, sour cream, onion mixture, white wine, parmesan cheese, salt, and pepper.
- Bake: Pour into a casserole dish and bake 60 minutes uncovered (375°F).
- Toppings: Remove from oven top with fried onions and chopped bacon.
- Return to the oven: Return casserole to the oven and bake an additional 15 minutes.
MAKE AHEAD GREEN BEAN CASSEROLE
Yes! If you are prepping this green bean casserole for a holiday meal like Thanksgiving, Christmas, or Easter you can make the whole thing and keep it in the refrigerator covered overnight. Do not put the toppings on until the end as the recipe instructs.

Ingredients
1 1/4 lb. fresh green beans, cut into bite-sized pieces.
4 pieces thick-cut bacon
3 onions
1/4 tsp salt
pinch of pepper
1 26oz can cream of mushroom soup
1 cup sour cream
1/2 cup white wine
2/3 cup parmesan cheese, grated
1 tsp salt
1/4 tsp black pepper
1 can of fried onions (could you use two cans…Probably, yes)
Instructions
- Preheat: Preheat oven to 375°F
- Render the bacon: Fry the bacon in a heavy bottom pan over medium heat until crispy. About 10 minutes, flipping halfway through. Set bacon aside.

Notes
Make-ahead green bean casserole: Assemble the casserole and store covered in the refrigerator overnight.
Healthier green bean casserole: You can make some swaps in this recipe. Here are some ideas: low-fat cream of mushroom soup, light sour cream, saute onions in olive oil, leaving out the bacon.
