Corn Casserole With Whipped Honey Butter
Yum yum yum. This corn casserole is so good and based on a childhood favorite, fried corn. Did you ever eat fried corn for breakfast as a kid? My dad would make it all the time and we would get so excited. I think he used corn on the cob that was left over from dinner the night before.
Whatever he did, it was magic; so I took that magic and turned it into a totally serve-able casserole that everyone will love. There’s everything that goes down to hold the casserole together (after that corn gets fried), eggs, sugar (Swerve in my case), evaporated milk. And then there’s a little drizzle of butter on top that gets broiled for a minute in the end. Butter + corn = BFFs.
Wait! I have to tell you about the whipped honey butter…OMG. THE WHIPPED HONEY BUTTER. Pretty much my new obsession for any day/any meal. It belongs as a little dollop on this casserole, but definitely needs to be on the table for all meals.

INGREDIENTS YOU NEED FOR CORN CASSEROLE
You only need a couple of fresh or frozen ingredients and several pantry staples for this delicious fried corn casserole.
- Fresh or frozen corn: Forms the base of this yummy casserole
- Creamed Corn: Helps form the casserole.
- Eggs + Butter: Eggs help leaven the casserole and the butter is both in the casserole and on top. Also the base of the whipped honey butter.
- Evaporated Milk + Half and Half: Evaporated milk adds to the creaminess of the fried corn casserole and the half and half is used in the whipped honey butter.
- Flour + Baking Powder + Salt + Sugar: Flour helps pull everything together and baking powder acts as a leavening agent. Salt and sugar boost the flavor level.
- Bacon + Onions + Garlic: The essentials for fried corn, and how this corn casserole gets started.
- Honey: Adds delicious flavor to the butter.

HOW TO MAKE THIS EASY VEGETABLE SIDE DISH
- Preheat: Preheat oven to 350°F.
- Render the bacon: Fry the bacon until crispy about 10 minutes, flipping at 5 minutes.
- Fry the corn: In the bacon drippings, combine corn, onions, and garlic and saute for 10 minutes or until onions are translucent.
- Add thickener: Add butter until melted and stir in flour, stirring constantly for 2 minutes.
- Combine ingredients: Combine eggs, evaporated milk, sugar, creamed corn, and baking powder.
- Stir: Stir in fried corn mixture (and crumbled bacon, optional), and pour into a greased casserole dish (I used cooking spray).
- Bake: Bake 40 minutes; remove from oven and drizzle 1 tbsp melted butter on top. Return to broil at 500°F for 1 minute 30 seconds, watching closely.
- Whip honey butter: Stir together butter and half and half. In a stand mixer or with a hand mixer, whip the softened butter mixer with honey until light.

5 ears fresh corn (or 4 cups frozen corn)
2 slices bacon
1 medium yellow or white onion, chopped
2 cloves garlic, minced
1/2 tsp salt
4 Tbsp butter
2 Tbsp flour
2 cans creamed corn
4 eggs
1 cup evaporated milk
1 1/2 tsp baking powder
2 Tbsp sugar or Swerve sugar substitute
1 tsp salt
1 Tbsp butter, melted
WHIPPED HONEY BUTTER:
1 stick (1/2 cup) butter, softened
2 Tbsp half and half
1 Tbsp honey
