A wedge salad is the easiest salad to make. The crunch hero is iceberg lettuce, cut into quarters and loaded with all the good things and their creamy BFF, homemade garlic blue cheese dressing.

What you really need to know, is how to make the garlic blue cheese dressing. Home made salad dressing is so easy and so much better than what you buy at the store. You get to skip all those questionable additives and run straight to creamy, pourable, question free-ness.
- It starts with a little mayo. Regular, light, organic, cage free…you do you boo. I am choosing light mayo, that just works for me.
- Spoon in a little milk and garlic paste.
- Add that chunky blue cheese.
- Sprinkle in a little salt and shake shake shake it in a mason jar.
How Do I Make Blue Cheese Wedge Salad For A Crowd?
This recipe is so scaleable.
Serving 4 people? 1 head of lettuce quartered, 4 slices of bacon, pint of cherry tomatoes. You have enough blue cheese dressing.
Serving 8 people? 2 heads of lettuce quartered, 8 slices of bacon, 2 pints cherry tomatoes . Double the garlic blue cheese dressing.
Here’s a prep tip: Line up all the plates and work with one ingredient at a time. Quarter all the lettuce and plate it, cook all the bacon, slice all the tomatoes. It is almost as fast to make 8 as it is to make two. Before a dinner party, I would prep these salads and keep them in the refrigerator covered for up to 2 hours.
Make This A Soup, Salad, Sandwich Dinner
This crunchy and creamy garlic blue cheese wedge salad stands on its own for lunch, or makes the perfect side dish for dinner.
For the salad:
1/2 head of iceberg lettuce
2 slices of bacon, cooked and crumbled
1/2 pint cherry tomatoes, about 12, halved
green onions, sliced
Blue cheese for garnish
For the dressing:
1/2 cup mayonnaise of choice (I used light mayo, provided nutrition data reflects this)
1/4 cup milk of choice (I used fat free skim)
1/2 tsp garlic paste (or 1 clove garlic, minced)
3 Tbsp (or more) chunky blue cheese
1/4 tsp salt
1/8 tsp pepper
For the salad:
Cut the half iceberg lettuce in half (a whole head quartered)
Pour over dressing
Top with cherry tomatoes, bacon, and green onions, and additional blue cheese
For the dressing:
Shake all ingredients together in a mason jar until creamy with blue cheese chunks remaining
