Homemade Parmesan Black Pepper Crackers
Crackers are my favorite food, I just can’t quit them. And these should come with a warning; it’s really hard to stop eating them. I’ve tried to get pictures for you at least four times and every single time, we eat each batch right out of the oven. When we have managed to save some, we have to force ourselves to bed or we’re standing in the kitchen at 10:00 eating the rest.
These homemade crackers taste like a really grown-up cheez-it. Which as a grown-up…I still really love. These are thicker, with more of an artisan texture, and less oily than Cheez-its though. They hold up perfectly to dipping or honey drizzling…you have to try that okay. A drizzle of honey, thin apple slice, fresh thyme…my new cracker addiction combo.
But we also have to talk about the fact that you can make crackers at home. I mean…this is pro-level 100. You are going to feel like a master chef when these homemade crackers come out of the oven. With parmesan and cracked black pepper, these are very close to the thicker artisan-style crackers you can buy at the grocery store, for a fraction of the cost and preservatives. And also, you can say you make your own crackers…there’s that.

INGREDIENTS YOU NEED FOR THESE HOMEMADE PARMESAN BLACK PEPPER CRACKERS
You probably have all of these ingredients in your pantry! If you don’t love black pepper, you can substitute most herbs like sage and thyme in these homemade crackers.
- Flour: all-purpose
- Parmesan Cheese: the dry grated kind, available in a shaker bottle.
- Fresh Cracked Black Pepper: I like fresh best, but you can use ground black pepper too.
- Roasted Walnut Oil or Olive Oil: For some reason, walnut oil makes these crackers puff up just a little and olive oil doesn’t. I liked the batch with roasted walnut oil the best.
- Salt & Sugar: Flavor boosters. I used Swerve sugar substitute (you can use real sugar).

HOW TO MAKE THESE UNLEAVENED CRACKERS
These are really easy but there are a couple of things you should know going into it. Specifically, you have to watch these homemade crackers closely in the oven to prevent over-browning. See the recipe notes within the recipe card below.
- Start the dough: Combine flour, salt, parmesan, and black pepper.
- Add water: Combine water and oil, Stir into the dry ingredients.
- Knead: Knead for a few minutes (5 minutes or less) or until the dough is smooth and elastic. I use a Kitchen Aid Mixer to make this process as easy as possible.
- Divide: Cut the dough into four equal sections, cut each of those in half. You should have 8 sections. Roll each into a 5-6″ log. Cut each log into 6 pieces. Roll them into balls.
I use a tortilla press to make the next steps easier, but you can also use a rolling pin.
- Press or Roll: This is easiest with a tortilla press. Using pre-cut tortilla parchment rounds (top and bottom), place four balls of dough on the tortilla press and press, watching the thickness of the dough. They should be 1/16″ thick.* See notes. You may not press the lever as tight as it can go.
- Bake: Bake for 10 minutes and then flip the crackers, baking for 7-10 additional minutes, watching very closely at 5 minutes. Cool crackers completely.
- Dry: Some crackers (depending on thickness) may need additional drying. Turn the oven off once all batches are finished. Open the oven to let the majority of the heat out and allow them to stand in the oven for 20 minutes or until crispy.

1 Tbsp confectioners sugar or Swerve confectioners sugar substitute
1/2 cup water
1 Tbsp Roasted Walnut Oil or Olive Oil

Notes
No tortilla press: Before dividing, roll the dough to 1/16″ thickness and cut it with a 2″ round cookie cutter (or biscuit cutter).
No cookie-cutter: Divide the dough and roll out each ball as per recipe instructions.
