We have had two days in a row of temperatures under 80°. While, everyone on the internet is pulling out the fall decor and ready-ing their best pumpkin spice latte outfits-of-the-day; I’m here picking pumpkins. Every year, I have pumpkins at the ready in the middle of the summer. Thanks to my daughter smashing a few pumpkins on the patio one summer, we never want for pumpkins. Just pumpkin spice lattes, because…too much sugar, amiright?
Maybe you acquired a pumpkin on a school field trip to the pumpkin patch, or you maybe you took your most Instagrammable fall outfit pumpkin picking. Either way, you ended up with a whole pumpkin, and you need to roast it. No, listen…you NEED to roast it. Here’s how to roast a whole pumpkin.
How To Roast A Whole Pumpkin
I feel like the worst thing about a pumpkin or any other fall/winter squash is the cutting. How do you actually hold it so that you don’t chop at least one finger off. Butternut squash…same thing. That first cut, you don’t know where the knife is going, and boom…close call.
Can I just tell you something? Put the whole thing in the oven.
Give it a few good stabs with a knife…like 7. Stab it up to let the heat escape a little. Put it in an oven safe baking dish, only because it makes it easier to take out of the oven once it’s done.
If you are wondering how to roast a whole pumpkin, you will really put the whole thing in the oven. Set it, and walk away. Set a timer though.
Once it is done, it will be soft and easy to cut through. I cut mine into about 16 pieces before I take out the seeds and soft insides. You can save the seeds and roast them.
Once you have divided it up, the skin pulls off very easily. You are left with pumpkin that is ready to puree or otherwise use in your favorite fall recipe. In case you are a homesteader like me, or you are a gardener looking to preserve your harvest- *I should note here that you should never attempt to can pureed pumpkin at home*. I go for freezing. Chances are if you are growing pumpkins at home, you have quite a lot. Just freeze your harvest and live to die another day, you don’t want to mess with botulism.Print
It is easy to roast a whole pumpkin at home!
1 whole pumpkin around 12″-14″ diameter
- Preheat oven to 350°
- Place pumpkin in a large oven proof baking dish
- Stab the pumpkin 7-10 times with a sharp knife
- Bake for 1 hr or until a fork is easily inserted
- Remove from the oven and cool before cutting
- Divide the pumpkin into smaller pieces that are easy to work with
- Scoop out the seeds and soft stringy insides
- Peel off the outer skin
