I promised you the other day in our Coronavirus Pandemic Chat that I would share my recent I-dont-care-chicken-dump-casserole. You know, the one where I didn’t care about making or eating dinner and threw a bunch of frozen stuff in the Instant Pot. Was it just so that I could say I made dinner, regardless of the outcome? Probably. That one turned out to be our new favorite dinner. This chicken and rice casserole goes in very questionably and comes out actually perfect.
There is something about a chicken and rice casserole that is the most cozy, and ultimately easiest dinner. Here, it’s made way easier by throwing all of the ingredients in the Instant Pot still frozen. My favorite part: easy kitchen clean up. No prepping, no mess, just throw it all in. One pot, one mess.
My other favorite part is that when you use bone-in chicken thighs on top of the rice with a little water it creates a chicken broth situation that dreams are made of.
How To Make Instant Pot Chicken And Rice Casserole With Spinach
There are a few things to know before you go dumping everything in and walking away. We will get to that part though. First, I used brown rice for this recipe. White rice works a little differently in the Instant Pot, so I’m not sure that they are interchangeable here. I love the brown rice because it is nutty and a little more healthy. The long cook time here really softens it up. You will add equal parts brown rice and water.
Next, you will put a straight up block of frozen chicken on top of the rice. I had previously divided up a large pack of chicken thighs and froze them after a trip to the grocery store, there are four in my pack because that’s how many we are likely to eat. I didn’t even leave them out for a minute. Freezer to Instant Pot; my new tagline.
Next, dump the frozen spinach on top. This is a dump meal. Dump it all in and walk away (ish).
That’s it. Set the Instant Pot for 45 minutes. When it’s done, you will be amazed like I was. “What?!?, it worked?…it looks so good”, I think that’s what I said. Top it with shredded cheese and dig in. This is the coziest meal there ever was. And we need some cozy meals right now, am I right?Print
Everything but the rice goes into the Instant Pot frozen and comes out the most glorious chicken and rice casserole with spinach.
1 1/2 cups brown rice
1 1/2 cups water
1/2 tsp salt
4 frozen chicken thighs (bone in, skin on)
12oz. frozen spinach
1/2 tsp salt
1/8 tsp pepper
1 1/2 cups shredded cheddar cheese
In the Instant Pot, add rice, water, and salt
Place frozen chicken on top, with frozen spinach on top of that
Sprinkle with salt and pepper
Close the lid of the Instant Pot and push the toggle toward “sealing”
Press Manual and use the +- to set the time to 45 minutes
When the timer goes off push the toggle toward venting* and vent the steam
Once vented, open the lid and sprinkle on cheese. Close the lid for at least 4 minutes*
I use a long handled spoon to push the toggle toward venting, keeping my hands away from the steam.
You can leave this casserole in the Instant Pot until you are ready to eat. It takes about 4 minutes to melt the cheese.
