When it comes to rice, the Instant Pot can be your best friend. I have been making rice for a long time now, and I still mess it up every once in awhile. I bring the rice to a boil, then forget it and burn the rice up in the bottom of the pan. That’s like my number one rice failure method. Sushi rice is even trickier. It becomes way easier when you make this Instant Pot sushi rice at home.
The Instant Pot makes the perfect rice every. single. time. It makes the perfect sushi rice too. Sushi rice has always been a challenge for me, I can’t ever seem to get the water/rice ratio right and end up with soggy overcooked rice. I mean it gets eaten, but it isn’t perfect. I’m here for the perfection. The Instant Pot does everything perfectly, including sushi rice.
You can really set it and forget it. Hands off sushi rice at it’s finest. Also, I should say that for this recipe, I made a lot of sushi rice. My daughter loves a sushi roll and it’s nice to have it on hand to make a quick roll for her after school or for an easy weeknight dinner. The rest of the family loves sushi too but we opt for a Keto sushi roll (coming your way next week). Kids just don’t love a cauliflower sushi roll.
How To Make Instant Pot Sushi Rice At Home
It starts with the rice. Sushi rice is a processed short grain rice that is sticky in texture once cooked. The rice is mixed with vinegar, sugar (Swerve in our case), and salt to make the final rice mixture used in sushi rolls.
You will rinse the rice first, just like you rinse vegetables before using them. I recommend a fine mesh strainer. Next you will measure out the right amount of rice and water, then combining them in the Instant Pot. You set it on manual, and wait just a couple of minutes. Let it release it’s pressure naturally and then let it cool a little. Instant Pot sushi rice is a hands off process! Once it is cooled a little you will gently combine the vinegar, sugar, and salt.
The finished product is this beautiful, easy vegan cucumber sushi roll, that I really want to eat. Right now. I usually make the kids a cucumber or avocado roll, and by the way…this makes a yummy school lunch that your child won’t trade.

Easy hands off Instant Pot Sushi Rice for creating beautiful sushi rolls.
2 1/2 cups sushi rice
3 3/4 cups water
1/4 cup seasoned rice vinegar
1/2 tsp salt
Rise sushi rice according to package directions
Combine rice and water in an Instant Pot
Close the lid and set to “sealing”
Using manual settings set for 10 minutes
All to release pressure naturally (about 22 minutes)
Allow to cool until it is lukewarm
Gently (with a fork) stir in vinegar, sweetener, and salt.
Store in the refrigerator or freezer
This makes quite a lot of sushi rice, enough for 9 rolls. I make this ahead and store a little in the refrigerator and the rest in the freezer. You can thaw it at room temperature and have sushi rice ready to go anytime you want sushi. This also makes enough to have a bunch of rolls at a dinner.
