Instant Pot Sushi Rice At Home

Description

Easy hands off Instant Pot Sushi Rice for creating beautiful sushi rolls.


Ingredients

Scale

2 1/2 cups sushi rice

3 3/4 cups water

1/4 cup seasoned rice vinegar

1/2 tsp Swerve (or sugar) *nutrition based on Swerve

1/2 tsp salt


Instructions

Rise sushi rice according to package directions

Combine rice and water in an Instant Pot

Close the lid and set to "sealing"

Using manual settings set for 10 minutes

All to release pressure naturally (about 22 minutes)

Allow to cool until it is lukewarm

Gently (with a fork) stir in vinegar, sweetener, and salt.

Store in the refrigerator or freezer

Notes

This makes quite a lot of sushi rice, enough for 9 rolls.  I make this ahead and store a little in the refrigerator and the rest in the freezer.  You can thaw it at room temperature and have sushi rice ready to go anytime you want sushi.  This also makes enough to have a bunch of rolls at a dinner.
