I’m pretty much ready to eat Magic Bullet Marinara Sauce on every single thing. This includes all the white beans that are in my pantry. Do you have white beans in your pantry right now? They’re cheap, which is why I have them stockpiled in glass jars. They are also not that interesting, and that is okay right now because we’re throwing them in the Instant Pot to make Instant Pot White Beans in marinara sauce.
This comes together so quickly and is the best lunch you have never had. Soft, mild, white beans smothered in fresh marinara with a little toasty mozzarella on top. Did I tell you that we made oven toast and dipped it up. When I put it in front of my 8 year old I fully expected her to eat the toast and stare at the beans, or make some other noise of disgust just before I sent her to time out. I was wrong. She loved it, and ate all of it.
Also, I didn’t let her have snacks in anticipation. But whatever…she loved it. The baby loved it too, he scooped it by the handful. It was a cheap and successful family lunch.
How To Make Instant Pot White Beans In Marinara
This is easy but does require you to soak the dry beans. Here is how I do it: Cover the beans in boiling water and let stand for one hour. Pour off the water and repeat for another hour. You can also leave them longer than an hour. If you are using canned beans, they are ready to go.
Start by making the magic bullet marinara sauce, our favorite versatile tomato sauce. Blend half a can (28oz) of diced tomatoes in a magic bullet. Blend the other half of the can with tomato paste, garlic, salt, sugar (or Swerve).
Combine the soaked white beans with the marinara, and a little water in the Instant Pot and get it going. Once it’s done, I ladled it into these pretty au gratin dishes.
Top each dish with mozzarella, and set under the broiler for a few minutes. If you want to make oven toast vs. toaster toast, simply butter the bread and pop it under the broiler watching it very closely. The toast is so good when you dip it in the saucy white beans.
I added crushed red pepper to mine just before I put the cheese on top, I like spicy.
Note: if you don’t have little dishes, just put it all in a casserole dish and top with mozzarella and place under the broiler.Print

1 1/2 cups dry white beans (or 3 cups canned beans)
1 28 oz can diced tomatoes
4 cloves garlic
1/2 tsp salt
1/2 tsp sugar or Swerve granular
1 Tbsp olive oil
6oz tomato paste
3/4 cup mozzarella cheese
1 cup water
Begin by soaking beans for 2 hours total. Cover beans in boiling water and let stand one hour. Pour off water and cover beans again in boiling water for another hour.
Process half of diced tomatoes in a Magic Bullet or Food Processor
Process other half of diced tomatoes with garlic, salt, and tomato paste
Combine soaked beans, marinara sauce, and cup of water in your Instant Pot
Close lid and set Instant Pot to “sealing” by pushing the toggle on the lid toward “sealing”
Press Manual and use the + – to set the time for 30 minutes.
Release pressure when timer goes off
Ladle beans and sauce into individual au gratin dishes or a casserole dish
Top with mozzarella cheese
Broil at 400° for 5 minutes, watching closely
