Saucy white beans smothered in mozzarella. Perfect for dipping toast. Only 30 minutes in the Instant Pot.
1 1/2 cups dry white beans (or 3 cups canned beans)
1 28 oz can diced tomatoes
4 cloves garlic
1/2 tsp salt
1/2 tsp sugar or Swerve granular
1 Tbsp olive oil
6oz tomato paste
3/4 cup mozzarella cheese
1 cup water
Begin by soaking beans for 2 hours total. Cover beans in boiling water and let stand one hour. Pour off water and cover beans again in boiling water for another hour.
Process other half of diced tomatoes with garlic, salt, and tomato paste
Combine soaked beans, marinara sauce, and cup of water in your Instant Pot
Close lid and set Instant Pot to "sealing" by pushing the toggle on the lid toward "sealing"
Press Manual and use the + - to set the time for 30 minutes.
Release pressure when timer goes off
Ladle beans and sauce into individual au gratin dishes or a casserole dish
Top with mozzarella cheese
Broil at 400° for 5 minutes, watching closely
