I need you to see the sauce and I need to tell you right now, that you can’t tell this isn’t Macaroni and Cheese. Yes, caps on the Mac and Cheese because it’s a thing. I have a real love hate relationship with Mac and Cheese. Love Mac and Cheese, hate the carbs. I can’t do the carbs. Do I sneak bites of my kids mac and cheese though? Maybe. Late at night. Instead of doing that, I have my own special low carb creamy cauliflower mac and cheese.
I needed to come up with something that checks all the adult boxes, veg √, low carb √, creamy √, can’t tell the difference √. Also, file this under Easy Weeknight Dinners because it doesn’t take much, and I know during the week you don’t have much left by the end of the day.
So, now that we’ve had a look at that golden cheese sauce, let’s talk about the Macaroni that is all wrapped up in a cauliflower costume. I roasted the cauliflower with a little olive oil, salt, and pepper.
The key is to cut it into macaroni sized pieces. This leads further credence to the deception and ultimately makes it easier to spoon into your mouth and really…aren’t we here for the spooning.
How to make low carb, creamy cauliflower mac and cheese
I start by getting the cauliflower in the oven. While that’s working, I make the cheese sauce. Heavy cream, sour cream, and Velveeta are all you need here. Any Velveeta works well and in these pictures I am using original. With that said, Queso Blanco is the best Velveeta.
You might be saying something like “Oh Mah Gah Ammmmyyy”, how could you use Velveeta? I’m not that proud of it, BUT…I noticed recently when I grate cheddar cheese in my food processor, it spins up so fast that it leaves a creamy cheese spread behind on the bottom of the lid. It looks and tastes like Velveeta, which made me think that I might be overly critical of it.
But I’m not giving it up now because this is a dead ringer for real mac and cheese and if you are living the low carb dream, you need a legit mac and cheese recipe. Once the cauliflower is done, you just stir it into the cheese sauce and it’s ready.Print
You can’t tell the difference between this low carb creamy cauliflower mac and cheese and the real thing, I pinky promise.
1 head of cauliflower, cut into 1/2 –1 inch pieces
2 Tbsp olive oil
salt and pepper to taste
4 oz Velveeta cheese
1/4 cup heavy cream
2 Tbsp sour cream
1/8 tsp salt
- Preheat oven to 400°
- Spread cauliflower in an even layer on a baking sheet
- Drizzle with olive oil and sprinkle with salt and pepper
- Bake 30 minutes
- In a cast iron pan, or heavy bottom pot on medium heat stir together cream, sour cream, and Velveeta
