I watch my blood sugar pretty carefully and so over the last 8 years or so I have learned to make a lot of things that taste nearly similar to their high carb (ugh…and tasty) counter-parts. Cauliflower is the perfect no flavor substitute to make so much of the carby things I love. Potatoes actually, don’t have much flavor. They have a lot of texture. I have found that you can make things very similar if you get the texture right and add the other flavors you expect to be there. Hi butter! Hiiiiii! I see you sour cream.
How To Make Low Carb Whipped Cauliflower Casserole
It starts with steaming the cauliflower. Don’t boil it. Cauliflower becomes easily waterlogged when boiled. If you ever make potatoes, you should follow the same method. Only steaming. It takes a few minutes to steam cauliflower, so give yourself some time.
Once it is done steaming, you will throw it in the food processor with all the goods; butter, sour cream, parmesan cheese, and good dose of salt and pepper. Then whip it good.
Remember that whole flavor thing? You need to override the cabbage flavor and season it with a heavy hand to get where you are going.
Next, you are going to do what needs to be done and sprinkle the cheddar cheese on top. Let it get all melty in the oven, and then top it with sliced green onions. You need a fresh little pop with all the butter, sour cream, and cheese.

1 head cauliflower
3 Tbsp butter
1/2 cup sour cream
1/2 tsp salt
1/2 tsp pepper
1/4 cup parmesan cheese
1/4 cup shredded cheddar
Steam cauliflower for 25 minutes
Remove to a food processor
Add butter, sour cream, salt and pepper
Process until smooth
Add parmesan cheese and process until incorporated
Pour into a baking dish and top with cheddar cheese
Bake at 350° for 15 minutes
