Low Carb Whipped Cauliflower Casserole

This low carb whipped cauliflower casserole is a dead ringer for a mashed potato bake, but safely low carb.  Perfect for an easy weeknight dinner.



1 head cauliflower

3 Tbsp butter

1/2 cup sour cream

1/2 tsp salt

1/2 tsp pepper

1/4 cup parmesan cheese

1/4 cup shredded cheddar


Steam cauliflower for 25 minutes

Remove to a food processor

Add butter, sour cream, salt and pepper

Process until smooth

Add parmesan cheese and process until incorporated

Pour into a baking dish and top with cheddar cheese

Bake at 350° for 15 minutes
