Morrocan Spiced Stuffed Peppers

Generously spiced ground beef with red onions and cilantro is combined with brown rice and nestled in sweet bell peppers. Packed with vegetables and flavor, Moroccan spiced stuffed peppers are your new favorite dinner.



4 bell peppers, halved

1 lb ground sausage

1 Tbsp olive oil

1 large red onion, diced

1/2 cup chopped cilantro

6 cloves garlic, minced

1 Tbsp chili powder (American style)

1 Tbsp garam masala

2 Tbsp sumac

1 tsp turmeric

1 Tbsp cumin

1 tsp cinnamon

1 1/2 tsp salt

2 eggs

Olive oil for drizzling

Salt and Pepper for sprinkling


  1. Preheat oven to 425°
  2. Whisk together eggs, olive oil, salt, and spices
  3. Combine with ground sausage, cilantro, garlic, and onions
  4. Halve peppers and drizzle inside with olive oil; sprinkle with salt and pepper
  5. Stuff peppers evenly with meat mixture
  6. Bake 30 minutes covered
  7. Remove cover and bake an additional 5-10 minutes


Garnish with chopped cilantro and pistachios (optional)
