2020 has been one y’all. For us, it has been better than for most so I want to recognize that first. Our family has a lot to be grateful for, even in this past year. The greatest thing to come out of 2020 for us, has been the realization of a plant-based diet. Feeling better, and doing better for ourselves, the animals, and the planet, feels good way down in our bones. With that being said, I want to share my favorite plant-based meals of 2020 with you.

A Quick COVID Story, Why We Are Ready To Leave 2020 Behind
We (I believe) made it through a ’bout of Coronavirus when it first started before the virus was on anyone’s radar. My one year old suddenly came down with 103.5 fever and we rushed him to urgent care where the doctor tested him for the flu. That test was negative but the doctor was perplexed about why he had such a high fever but not the flu. He did have an ear infection, but I believe that was secondary. That fever continued for 6 days, we were barely ever able to get it down to 102 with constant alternating of Motrin and Tylenol. He turned blue twice during that week. We thought he was dehydrated but now we suspect his oxygen level was low.
My daughter then got sick, two days out of school. My husband too, two days out of work. I didn’t really get sick, and I attribute that to a regimen of vitamins and supplements that I take to manage my auto-immune disease. And we haven’t really left quarantine since. I hope that was COVID because it means that we made it through it without dying, like so many people. If you have a family member that has passed away this year, please know we are so sorry. Our hearts go out to you.
WE’VE ADOPTED A VEGAN DIET TO BOOST OUR HEALTH
Taking care of our health seems like one of the best ways to go forward in the new year. COVID seems to not love a healthy body so we want to get to that point as quickly as possible. After seeing my baby turn blue twice, I would pretty much do anything to keep that from happening again. Including staying home, wearing a mask, and adopting a healthy lifestyle through eating plant-based meals. Here are some of my favorite ways to eat healthier:

Going forward into 2021, we are planning and developing mostly plant-based meals to publish here on Amy Cakes Cooks. We sincerely hope that you follow along, whether you are following a plant-based diet or just wanting to up your vegetable game in the new year. No one can deny that focusing on vegetables and reducing processed foods is a good thing to do.
So we’re doing that. I feel like it can be daunting to think of vegan plant-based recipes that are satisfying and healthy at the same time. I’m here to help with that. For us, the transition was not difficult and I think, in part, that was due to me being able to use my cooking knowledge to work on coming up with enjoyable recipes.
