Get ready to eeeeaaat! This is way I grew up eating green beans. This is the way my Mom grew up eating green beans, and her Mom too. You have to do the onions and bacon right with this one, boiled bacon and tiny minced onions. If you don’t do those two things, you can’t call it old fashioned southern green beans, mmmkay.
These green beans could be fresh from the garden in the summer, which makes them double old fashioned. They can also be from the grocery store anytime, you do you boo…just make sure they are fresh. If I don’t have green beans that I put away from the summer garden, I buy them and wash them really well.
How To Make Old Fashioned Southern Green Beans
It starts with the most important part, the bacon. You only need two slices, chopped into medium pieces. Make sure you dice the onion on the small side, nearly a mince.
In a wide skillet, boil 1 inch of water. Add the bacon and onions and let it roll for a few minutes. This is a really quick recipe, and you need that quick recipe today, I see you. We’re tired and we need this to be fast.
Add the green beans, stir a little, and cover it up. I am using a Copper Chef skillet for this because it comes with glass lid that is really useful for skillet steaming ventures like this. I recommend Copper Chef for steam simmering and very liquid recipes. I don’t recommend them for sautéing, at all…ever.
Let it steam simmer for about 5 minutes, keeping an eye on the water level. The goal at the end of this is for onions to melt a little into the bacon water swirl and create a creamy little sauce. It shouldn’t be liquid-y at the end and it shouldn’t be out of water, burning the green beans. Keep an eye on it.

These old fashioned southern green beans are the perfect side dish to any dinner.
1 lb. fresh green beans
2 slices hickory smoked bacon, cut into medium pieces
1 onion, diced small (nearly minced but not that small)
1/4 tsp salt, or to taste
1/8 tsp pepper, or to taste
In a wide skillet, bring 1 inch of water to a boil
Add bacon and onions, boil for 4-5 minutes
Add green beans, salt, and pepper.
Stir to combine, reduce heat to medium
Cover and let simmer for 10 minutes being careful not to let the water run out
The 1 inch of water should be enough, if the water runs out, add 1/4 cup at a time until a creaminess develops.
