Also, you don’t have to eat two $20’s for lunch. I’m just saying. Today we get a WHOLE Panera copycat Mediterranean veggie sandwich.

I have nothing against Panera; in fact I love Panera. Every single time, I get the Mediterranean veggie sandwich and the 10 vegetable soup (don’t forget I made the recipe for Instant Pot Panera 10 Vegetable soup). I will continue to do that every time I am out, and stop at Panera, but I’ll still be hungry because…half sandwich, half soup.
This is why I’m here making a copycat Panera Mediterranean veggie sandwich. I get a whole sandwich, and a whole soup, in the comfort of my own yoga pants.
How To Make A Copycat Panera Mediterranean Veggie Sandwich
The bread is kind of irrelevant. As long as you use a high quality artisan bread, it comes out fine. At Panera they use a sundried tomato bread, but I have found each time that it has some weird cinnamon sugar stuff on top. I’m good with a nice artisan bread, and that’s what I used here.
First you spread both slices with hummus and then chopped roasted red peppers. I used Sabra prepared hummus and Wickles spicy red sandwich spread.
I can pretty much make 100 of these sandwiches at this point. Mediterranean veggie sandwiches for days.
Next you layer on crumbled feta, sliced cucumbers, sliced red onion, lettuce of your choice, and tomato.
Let’s talk about substitutions for a minute:
- Swap sun dried tomato bread for regular artisan bread
- Swap cherry tomatoes for regular tomatoes
- Use different flavors of hummus
- Choose diced roasted red peppers or a red pepper sandwich spread
I’m looking hard at these three things! That cookbook is # 1 on my list, and I use this bread maker weekly for Artisan bread!

2 slices Artisan bread
2 Tbsp prepared hummus
1 Tbsp roasted red pepper, diced (or Wickles red pepper sandwich spread)
1 Tbsp feta crumbles
8 cucumber slices
2 red onion slices, thin
1/4 cup arugula
5 cherry tomatoes, halved
Spread the sliced artisan bread evenly with hummus (1 Tbsp per slice)
In this order, top with roasted red pepper, feta, cucumber slices, red onion, arugula, cherry tomatoes
You can substitute many things in this recipe to make it your own. I used Wickles red pepper sandwich spread instead of roasted red peppers.
Keep all the ingredients handy so you can make this sandwich all week.
