2 slices Artisan bread
2 Tbsp prepared hummus
1 Tbsp roasted red pepper, diced (or Wickles red pepper sandwich spread)
1 Tbsp feta crumbles
8 cucumber slices
2 red onion slices, thin
1/4 cup arugula
5 cherry tomatoes, halved
Spread the sliced artisan bread evenly with hummus (1 Tbsp per slice)
In this order, top with roasted red pepper, feta, cucumber slices, red onion, arugula, cherry tomatoes
You can substitute many things in this recipe to make it your own. I used Wickles red pepper sandwich spread instead of roasted red peppers.
