Winter is literally the worst for me. I am stuck inside all the live long day…dreaming of being in my garden. Instead of toiling away with my dog, my cat, my chickens, all the farm folks I love to hug; I am trying to figure out how to get rid of some things in my pantry. It’s time to organize it all, errrrrythang; all.the.things, and I’m going stir crazy. Literally stirring up these skinny cranberry orange muffins for you.
How To Make Skinny Cranberry Orange Muffins
It started with these dried cranberries I found in the pantry during this epic cleaning session. I also stumbled across some leftover oranges from making the old-fashioned simmer pots in my Etsy shop. The dry ingredients are all pantry staples. You whisk them up in a big batter bowl. Separately whisk together the wet ingredients, and then combine both. The orange flavor is to die for here, and I know that because I ate some batter, okay. I see you staring at me.
Our family definitely doesn’t need to have a huge pile of muffins laying around so I saved half the batter in a piping bag for another frantic day. I don’t know about you but I literally HATE pulling out a hundred ingredients and destroying the kitchen. Pulling this piping bag of muffin batter our of the freezer is way easier and the kitchen stays clean. So in the end this recipe makes two separate batches of muffins for us.
The muffins rise beautifully but don’t spill over which is really pretty. I use a cast iron muffin pan with liners, because hi…I don’t want to clean up a muffin mess. Speaking of New Years cleaning, when I worked on cleaning out my pantry last weekend, and found a lifetime supply of liners. Apparently I’ve been buying them on repeat and shoving them down in the depths of the pantry like the good Lord intended. Only to buy more the next time. I organized the lifetime supply, we good now.
How To Make Low Carb Muffins

Yummy and skinny cranberry orange muffins make a great breakfast or snack.
3 cups all purpose flour
3/4 tsp salt
1 Tbsp baking powder
1 tsp baking soda
1 cup Swerve granular
1/2 cup unsweetened applesauce
zest of 1 orange
1/4 cup fresh orange juice
2 Tbsp grapeseed oil
1 cup light sour cream
1/2 cup + 1 Tbsp fat free milk
1/2 cup dried cranberries
Preheat oven to 350°
Whisk together dry ingredients
Whisk together wet ingredients
Stir dry ingredients into wet ingredients
Stir in dried cranberries
Pour into a lined muffin tin, filling halfway
Bake 25-30 minutes
