Do you ever wake up on Saturday or Sunday morning and just want to hang out? You want to sit on the couch, sip your coffee,
stalk your husbands co-workers on Facebook scroll Pinterest. I do. It never fails, I sit down and suddenly my family wants things like “breakfast”. I think about running away for a second, because I cook ALL. THE. FOOD; all the live long day. I need a minute. Do you need a minute? If you do..I know what to do…we make a spicy low carb breakfast casserole, and then disappear.
It starts with making this spicy low carb breakfast bake the night before. Guests on the weekend? All the more reason to want to disappear for a minute; you have to start this breakfast casserole now. You can easily leave this in the refrigerator the night before, minus the shredded cheddar cheese.
How To Make A Spicy Low Carb Breakfast Casserole
It starts with Jimmy Dean hot sausage. This is the brand that I prefer, although if we were in North Carolina, I would choose Neese’s hot sausage. You saute´ the sausage, crumbling it up to go in the bottom of the baking dish. While you are working on that, whisk the eggs, cream, parmesan cheese, salt and pepper together. Grate the cheddar cheese.
Arrange the sausage in the bottom of a baking dish, and pour over the egg mixture. At this point you can cover it and put it in the refrigerator overnight.
Bake for 15 minutes and then sprinkle the cheddar cheese on the top and put it back for another couple of minutes. If you say “hey can you pull this out when it beeps”, you get more time. They know what to do once it’s out. I’m heading out to the garden with my cat, Milo. It’s quiet there on a Saturday morning and if I’m lucky they will leave me a piece of this breakfast casserole.Print
This spicy low carb breakfast casserole can be made ahead and cooked when ready.
1 lb. Jimmy Dean Hot Sausage
1/4 cup grated parmesan cheese
1/4 cup heavy cream
1/4 tsp salt
1/4 tsp pepper
Preheat oven to 375°
In a skillet, saute sausage gently breaking it apart into crumbles
Whisk together eggs, parmesan cheese, cream, salt and pepper
Bake for 15 minutes
Remove from the oven and sprinkle with cheddar cheese
Return to oven for 7 minutes
