Spicy Three Bean And Quinoa Veggie Burgers
That three-bean salad I shared with you the other day was a CHAMPION in our house last week. It made three meals, and we enjoyed it so much. First, we ate the three-bean salad as is, and then used the leftovers to make the most amazing cheesy grilled stuffed burritos for dinner one night (do you want that recipe?).
With the next batch of leftovers, I swirled up that three-bean salad in the food processor with a little leftover quinoa, chipotle en adobo, and some rolled oats for good measure. I formed the mixture into veggie burger patties (it made four good sized veggie burgers), sauteed them a little, then baked them in the oven.
I initially held this recipe back because the burgers are softer than store-bought veggie burgers. You can gently flip them, and slide them onto a burger bun after baking...we're good there. But they aren't hard and chewy. You should know that going in, they're not ultra-firm. Homemade veggie burgers almost always have a much softer texture, especially with the addition of quinoa. With that said, quinoa is the complete protein we vegans are always chasing down, and so...it just belongs in a veggie burger today and maybe always.
INGREDIENTS YOU WILL NEED
The three-bean salad already has all the delicious things I would already put in a veggie burger: Onions, cilantro, garlic, diced bell pepper, jalapeno...and more.
- Three Bean Salad: Go ahead and make this. You will not regret it and it will make a bunch of meals for you all week.
- Quinoa: A complete protein and so much more.
- Chipotle en adobo: Spicy smoked jalapeno peppers. Use as much as you want, I used one but would use more if the pickiest kids ever weren't also eating it.
- Rolled Oats: Helps to absorb any liquid from the other ingredients.

HOW TO MAKE THESE VEGAN BEAN BURGERS AT HOME
Veggie burgers can be a really easy process, just throw everything in a food processor, brown, and bake.
- Prepare: Prepare my three-bean salad recipe.
- Process: Pulse all ingredients in a food processor until beans become a paste.
- Form: Form into four equal-sized patties.
- Brown: Brown patties in olive oil for two to three minutes on each side.
- Bake: Carefully transfer to a baking sheet (they are still soft, you may need to tuck in the edges to form circle patties again) Bake for 30 minutes.

2 cups of my Three Bean Salad recipe (this salad is perfect for burritos, tacos, etc)
1 cup of prepared quinoa (see notes)
1 chipotle pepper and 2 tsp sauce (from chipotle en adobo)
¼ cup rolled oats
Instructions
- Prepare: Prepare my three-bean salad recipe.
- Process: Pulse all ingredients in a food processor until beans become a paste.
- Form: Form into four equal-sized patties.
- Brown: Brown patties in olive oil for two to three minutes on each side.

Easy stovetop quinoa: Combine 1 cup of quinoa and 2 cups water in a saucepan. Cover and bring to a boil and then turn down to medium-low heat. Cook for 20-25 minutes.
*You will have leftover quinoa and three-bean salad. Perfect to make more burgers or throw in a tortilla for burritos, quesadillas, tacos, and more.
