Freshly sliced jalapeno peppers are marinated with pineapple, sweetener, garlic, and olive oil to make the best topping for summer salads or grilled chicken, steak, and shrimp! Totally scoopable and mellowed out after a day these sweet and spicy marinated jalapenos are the most yum combination of flavors for summer.

Ingredients

6 fresh jalapenos, sliced (not seeded)

1/2 cup fresh of frozen pineapple, diced

6 cloves garlic, minced

3/4 cup olive oil

1 Tbsp sweetener (I use Swerve granulated sugar substitute)

3/4 tsp salt


Instructions

  1. In a mixing bowl, combine jalapenos, garlic, oil, pineapple, salt, sweetener (I used Swerve).
  2. Transfer to a lidded jar
  3. Allow to sit overnight in the refrigerator or at least 3 hours
