Leek And Lima Bean Soup
This leek and lima bean soup has been a favorite of ours for at least the last ten years. It is silky, and buttery (without the butter), thanks to those little lima beans. This has a fairly short ingredient list, and excluding the pantry staples (olive oil, salt, and pepper), has only five ingredients. I love a recipe with five ingredients or less because it usually means a quick and easy meal for everyone.
This leek and lima bean soup is definitely easy. You are just going to quickly saute the leeks and garlic and then throw everything in. If you are not following a plant based diet, you can opt to saute the leeks and garlic in bacon, and then use the rendered bacon as a topping. If you do this, you will probably want to skip the olive oil.
This will just simmer away on the stove top for almost an hour (or more, do what works for you). This makes a great lunch and I really feel like I have it together when everyone gets a hot lunch. There is something about soup simmering in the middle of the day that feels really special.

INGREDIENTS YOU NEED FOR THIS VEGAN PLANT-BASED SOUP
Less than five ingredients (not counting pantry staples: olive oil, salt and pepper) for this leek and lima bean soup! Scroll to the end of this post for the printable recipe.
- Leeks: One large or two medium. Leeks have a sweeter and more mild flavor than onions but are in the onion family.
- Lima Beans: Lots of little buttery limas. Contributor to the silky final texture. I used “fresh frozen” lima beans.
- Vegetable Broth: Store-bought or homemade.
- Garlic: For a flavor boost.
- Olive Oil: Just a little to help saute the leeks.
- Lemon Juice: adds a little fresh bump at the end.
- Salt and Pepper: Flavor boosters.

HOW TO MAKE LEEK AND LIMA BEAN SOUP

- Saute: Saute sliced leeks in olive oil until soft and tender, about 10 minutes. Add garlic and saute for another three minutes.
- Simmer: Add lima beans, broth, salt, and pepper. Bring to a boil and then reduce to a simmer for 45 minutes-1 hour.
- Blend: Use an immersion blender to puree the soup. (or transfer to a blender or food processor).
- Add Lemon: Add lemon juice and stir until combined.

1 large leek or 2 medium leeks, cleaned and sliced
1 Tbsp olive oil
8 cloves of garlic, minced
4 cups (24oz.) frozen lima beans
5 cups vegetable broth
1 tsp salt
fresh cracked black pepper to taste
2 tsp lemon juice
Instructions
- Saute: Saute sliced leeks in olive oil until soft and tender, about 10 minutes. Add garlic and saute for another three minutes.
