At one point or another, all of us low-carbers have been faced with a wheel of brie. What do we actually do? What do you eat with brie that isn’t a cracker, crostini, or toasty piece of bread? I mean, nothing else is worth it. Not celery, not meat sticks, nothing. Except for the easiest low carb keto crackers that will take you less than 5 minutes to make.

It starts with Josephs Lavash bread. Josephs Bakery makes a lot of great products like Flatbread, Pita, Gluten Free Wraps, and more. I chose the Lavash bread because it is larger than the rest, and hi….I need the most crackers. Half of one large wrap is plenty to make a yummy wrap sandwich, or 28 crackers. Mmmhmmm….28. Who on a low carb diet doesn’t want 28 crackers at all times? 28 crackers is 6 net carbs here, and you can spring for that.

Making low carb keto crackers from scratch takes a minute (and you don’t have a minute right now) and the results are often really iffy. I’ve tried to make the perfect cracker about 10 times in the last 6 months. They are never perfect. This is perfect. And you have something legit to dip in the Brie. You can have your Brie and eat it too (amiright).
But wait, you could also put these on a salad, like a little low carb crouton. There’s more, you can also shake them up with a little butter and cinnamon sugar (swerve, sugar substitute). These little crunchy crackers are like a low carb chameleon, they could be anything.
How To Make The Easiest Low Carb Keto Crackers
All you need to do is cut the Josephs Lavash Bread in half. Then you will each half into 7 strips, then each strip into 4 crackers. I only use parchment paper sheets to bake with, and I have used them here. The parchment paper prevents over-browning and that is important for these little crackers. They are very thin, and can be overcooked easily. You are only going to pop them in the oven for 3 minutes. Quick and easy.

Instructions
Preheat oven to 400°
Cut the flatbread in half
Using each half cut 28 crackers (7 strips, cut into 4)
Bake 28 crackers at a time on a parchment sheet for 3 minutes
Notes
You might be able to go a tiny bit longer in the oven for crispier crackers, 30 seconds maybe. Watch it very closely.
