This pineapple rum Goldeneye is the most tropical drink you've had this summer. And dare I say it's easy enough to make on repeat on these hot summer evenings. Ice, pineapple juice, rum, drink, repeat. That's what summer is about. And we are definitely drinking these tropical daddies by the pool because this summer is a hot one.
Is it hot where you are? It has been over 100° in Virginia for a month...with no rain. Drought times are hard times here on the farm so we're drinking up. One for us, a pour for the homies (earth = my homie).
IMPORTANT RECIPES NOTES:
- Only use white rum. You might be tempted to use spiced rum because you have it on hand. I promise you that is not a good idea. Spiced rum & White Rum are not the same.
- Fresh pineapple juice is the best here. Canned pineapple juice tastes like it's been in a can. Something's not right.
- Only a squeeze of lime: a whole tsp would be too much. Just give it a boop...little light squeeze.
- Lot's of ice goes in the glass, fill it more than halfway.
INGREDIENTS YOU NEED FOR THE BEST PINEAPPLE RUM GOLDENEYE COCKTAIL
- Pineapple Juice: Fresh pineapple juice either buy it from a fresh foods store, in a box, or make it yourself by pureeing fresh/frozen pineapple in a food processor, Magic Bullet, or Vitamix, and straining it through a fine mesh strainer.
- White Rum: Not to be confused with spiced rum. I used Bacardi.
- Fresh Lime Juice: A very light squeeze, not even a teaspoon.
- Ice: Lot's of ice. Crushed or cubed, it's up to you.
- Fresh Basil Leaves: I garnished with basil, this is not part of the recipe but when you sink it into that ice laden pineapple, she good. I'm not mad if you muddle them a little in the bottom of the glass. Basil and pineapple are BFF's.
HOW TO MAKE A TROPICAL GOLDEN EYE SUMMER COCKTAIL

- Start by filling your glass with ice.
- Pour over 1 oz. of White Rum (use these liquor jiggers to measure accurately).
- Pour over 4 oz. fresh pineapple juice.
- Give a very light squeeze to half a lime, and stir.
- Give it a stir and garnish with fresh basil leaves (optional).
