But that’s wrong so…I’m here trying to get as much chewy corners with soft fudgy middles as possible. When I set out to make the ultimate keto fudgy brownies, I knew they needed to be a hybrid. No sugar, no white flour, but also…light on the butter. Do you know the usual way to make keto fudgy brownies?

I’m trying to be skinny by dinner time.
So there are not going to be any sticks of butter for me. It is really easy for me (on Keto), to just go crazy with food as long as it doesn’t have carbs. That’s not really the right way to do life or Keto. I’ve had great success with Noom by lowering my calories daily. But I still won’t eat sugar. Like I said…hybrid status; low carb, low calorie.
How To Make Keto Fudgy Brownies
I’m going to just start with the secret, okay. Unsweetened Applesauce. Don’t be all “Ohmigah that’s not Keto”. There is a time and a place for everything, and there is only 1/2 cup of unsweetened applesauce between 18 brownies and so you’ve got this.
The batter comes together so easily; melted butter mixed with Lilys baking chips. I’m sorry I don’t have a picture of that; not sorry I will have to make these again to update you. You will stir all the good stuff together: almond flour, eggs, cocoa powder, vanilla, that whole melted butter and chocolate bowl you want to drink straight up.
I used a rectangular tart pan but it’s not necessary. You can use a cake pan, cakelet pan, as seen on TV brownie pan, you do you. Just make sure it’s not bigger than 9″x9″, that might affect the cooking time.
How Are These Keto Brownies So Skinny?
I did a few things here to lower the calories and fat in these brownies. Like I said, I personally needed a hybrid recipe. Something that was low carb AND low calorie. That isn’t always easy to come by.
- I used half the butter I would have normally used.
- I substituted unsweetened applesauce in place of the butter
- I only used one whole egg and then two egg whites
- I went as low as possible on the Almond flour, which has a lot of calories
If you see the nutrition label below, I was able to get them under 50 calories and 1.7 net carbs each. That is a success story in my kitchen today. Let me also mention, these are so low calorie, you might be able to spread some Keto low carb sugar free Nutella on top, that’s what I’m about to do.
Pretty things you might need:
The Ultimate Keto Fudgy Brownies have chewy corners and fudge-like middles. They are so good when they are fresh from the oven but they are also amazing a couple of days later.
4 Tbsp salted butter
1/2 cup Lilys baking chips
1 egg + 2 egg whites
2 tsp vanilla extract
1/4 cup cocoa powder
2/3 cup Swerve, granular (erythritol)
1/4 cup +1 Tbsp Almond flour
1/2 tsp xanthan gum
1/2 cup unsweetened applesauce
Preheat oven to 375°
Melt butter in the microwave (approx. 30-45 seconds)
Stir in Lilys baking chips and set aside
In a large mixing bowl, whisk together: almond flour, cocoa powder, swerve, & xanthan gum
Stir in eggs, vanilla, applesauce, and melted butter mixture
Spray your pan* of choice with cooking spray and spread the mixture evenly
Bake for 30-35 minutes or until edges begin to harden and middle is set.
*I used a tart pan this time. I have also used a 9″ round cake pan and square. I wouldn’t go larger than 9″ as it may effect cooking time as well as thickness. Since there isn’t much leavening in this recipe, the smaller the pan, the taller the brownies.
